I have a Sony HDR-HC3 video camera and a Sony Vaio VGN AW11Z PC. I have used Sony Click to Disc Editor to transfer videos from camera to PC. Explorer shows the transferring date of the files (.m2t) as the creation date and time. The Capture Date is blank. How can I see the capture date in Explorer or Elements 4.0 without renaming the files via Explorer?

You can't make Explorer show the capture date if it already fixes the transferring date of the files as the creation date. From what it seems, your videos don't contain the tags with the capture date. To be sure, right-click the videos, click Properties and open the Details tab. You should be able to see the capture date in the File section. In order to resolve the issue, you can use a video editor from Software Informer database to modify the tags.
